Savory Pastries with Wild Garlic and Cheese
Today we’re making delicious wild garlic and cheese biscuits!
Method
-
Cut a bunch of wild garlic, which is approximately 60 g, into small pieces. Sift 500 g of semi-coarse flour and 12 g of baking powder into a bowl. Add one teaspoon of salt and half a teaspoon of powdered sugar. Mix the loose ingredients together. Add 80 g of softened butter, which we work into the mixture with our fingers to create fine crumbs. Finely grate 100 g of hard cheese into the dough. I used unsmoked.
-
Add 1 whole egg and 250 g of sour cream with a fat content of at least 16%. You can also replace the sour cream with soft curd cheese. Finally, add the chopped wild garlic and knead a soft, non-sticky dough. Lightly flour the work surface and shape the dough into a loaf. Roll out to a thickness of about 1.5 cm. I used a 6.5 cm diameter cookie cutter to cut out the shapes.
-
You can also use a different diameter depending on how big you want the pagáčky to be. Place the pagáčky on a baking sheet lined with baking paper. Leave a small gap between them. I used two baking sheets this way. Beat one egg in a bowl and brush the pagáčky with it. You can sprinkle cheese or seeds on top, depending on your taste.
-
Bake in a preheated oven at 190°C for approximately 15 to 18 minutes until golden brown. Pagačíky with cheese and wild garlic smell wonderful. They have a crispy crust and a soft, fluffy middle. They taste best still warm, even for dinner. And if we warm them up briefly in the oven, they are also delicious the next day. For example, for breakfast with a glass of milk.

And if you have your own recipe for similar pastries with wild garlic, I would be happy if you shared it in the comments.
