Walnut Meringue Sandwich Cookies (Laskonky)
Crispy, delicate walnut meringue shells filled with a delicious walnut cream – this is what traditional homemade Laskonky taste like!
Method
-
4 egg whites, 220 g crystal sugar. Whites with sugar, we will just heat them over steam, not whisk . Stir and monitor the temperature occasionally. It must be at least 73 ° C so that the whites can be safely consumed. Whisk for 15 minutes at high speed. After 15 minutes we have such beautiful, thick snow. 107 g of finely ground walnuts and 67 g of powdered sugar. We can also replace walnuts with coconut flour.
-
We sift the sugar so that there are no lumps in it. Snow, nuts and sugar must have the same temperature (room temperature). Mix slowly by hand. Apply oil to the mold. It will peel off more easily from the dough. Fill in all the gaps. We wipe the dough out of the mold in both directions. The shells will be flat. We work carefully. Wash, dry and grease the mold before each use.
-
Preheat the oven to 100 ° C, turn on the fan, place the plate on the middle rung and dry the mussels for 60 - 65 minutes. I do not recommend a higher temperature, because sweets would lose their white color and crack. Well-dried sweets change their shape and color only minimally. If successful, they are light, brittle and crunchy. I filled these sweets with nut - coffee cream. Divide 200 ml of milk in half. Add 4 egg yolks to 100 ml of milk. I added only 2, because I had 2 whites left from the previous cake.
-
Add 35 g of corn starch. 1 teaspoon of plain flour. 1 bag of vanilla sugar. 100 ml rest of the milk pudding milk. 5 tablespoons of crystal sugar. Boil a thick slurry while stirring constantly. Allow to cool and stir occasionally to prevent lumps. 150 g of room temperature butter and pudding porridge of the same temperature. Add the pudding to the butter gradually, in about 4 pieces.
-
We can season this basic cream in various ways. For example with coffee and nuts. 40 ml of hot water, 1 teaspoon of ground coffee, 1 tablespoon of rum and brew strong coffee. Pour hot coffee into 2 tablespoons of ground walnuts. 20 g of butter and cooled walnut porridge. Mix everything together and whisk into a thick cream. We will fill the sweets using a pastry bag with a decorative tip.
-
We will produce 20 tasty delicacies from the stated amount of raw materials.
