Festive Quark Cake
A moist yogurt cake base, a delicate cottage cheese filling and fresh blueberries. The cake is delicious on its own, but once you decorate it with a whipped cream topping, a raspberry and a chocolate curl, it instantly turns into a beautiful little dessert.
Method
-
Add one large egg to 500 g of full-fat curd quark. Mine is homemade, and as luck would have it, it has two yolks. Don't let that confuse you. One egg is enough. Add 80 g of icing sugar, or adjust the amount to your taste. Also add 20 g of vanilla sugar. Blend everything until completely smooth using an immersion blender. This keeps the filling from spreading and helps it hold its shape nicely.
-
So it's also suitable for filling sweet quark buns. Low-fat and fat-free quark contain more water. After blending, the filling is thinner and isn't suitable for filling. With full-fat quark, you can see that it's beautifully smooth and nicely thick. Now let's prepare the batter. Add 3/4 teaspoon of salt to 450 g of plain flour. Sift in 15 g of baking powder and mix everything together.
-
Crack six medium-sized eggs into a mixing bowl. Add 300 g of icing sugar and beat on high speed until thick and pale. Add 180 g of thick, plain yogurt to the beaten eggs. For example, Greek yogurt. Add 180 g of sunflower oil. Mix briefly and slowly. Then gradually start adding the dry ingredients. Don't increase the mixer speed. Finally, mix the batter by hand once more.
-
Line a deep baking tray measuring 37 x 44 cm with baking paper. Pour the batter onto the tray and spread it evenly over the entire surface. Smooth the top. Put the quark filling into a piping bag and pipe a grid over the batter. We'll cut the cake through the center of the quark filling, so we try to be as precise as possible, so that all the pieces are at least roughly the same size, which of course doesn't always work out.
-
Place the prepared blueberries between the quark filling lines. Preheat the oven to 180°C and bake the cake for about 25–30 minutes until golden brown. Let the baked cake cool down. Then cut it into smaller pieces. As I mentioned, for a nice-looking cut, slice the cake through the center of the quark filling. The cake prepared this way only needs a dusting of icing sugar and it's ready to serve.
-
But if we want it to look a little more festive, we can decorate it further. In a chilled glass bowl, place 125 g of chilled Philadelphia cream cheese or mascarpone. Add two tablespoons of icing sugar, or more to taste. Whip briefly. Pour in 250 ml of chilled heavy whipping cream and whip until stiff. Using a piping bag, pipe the cream onto the cakes. Place a raspberry and a chocolate curl on each piece.
-
And the cake is ready. Now we can enjoy it.
